We’re preparing for a month of Roast Revival! However skilled we are in the kitchen everyone wants to perfect this traditional family meal of the week.

Slow Roast Belly Pork, Turlu Turlu & Salsa Verde

Slow Roast Belly Pork, Turlu Turlu & Salsa Verde

Place a neat pile of Turlu Turlu in the middle of the serving plate, top with a slice of pork with its crackling attached, position clams around the outside, drizzle with the Salsa Verde and serve.

Roast Pheasant Breast, Puy Lentils, Watercress and Crème Fraiche

Roast Pheasant Breast, Puy Lentils, Watercress and Crème Fraiche

Spoon lentil mixture into the middle of your serving plates, slice the Pheasant breast as desired and place on top.

Loin Of Lamb, Merguez, Roast Tomato, Garlic Jus

Cut the rested hot lamb loin across, into 3 equal pieces, arrange around the outside of the garnish, putting the Merguez, baby onions and roasted garlic in between.

Shred the Lamb at the table, serve with warm flat breads and salads.

Braised Oxtail, Colcannon, Cep Mushrooms ,Red Wine & Madeira Jus

Sauté the mushrooms to golden brown, season, place on top of the Oxtail, sprinkle with chopped parsley.

Cook the Pork & Haggis as a roasting joint and enjoy the crisp crackling, rest for 10-15mins before carving so you don’t lose that all important juice from the meat.

Put into a casserole, place a piece of baking paper directly on top, then a lid, place into the oven for 1 hour then add the peeled button onions, cook for a further 30 minutes then add the mushrooms.

Lamb Rump, Fennel & Blue Cheese Gratin

When the gratin is cooked cooked remove foil & place under the grill until golden brown, serve.
