Pre heat oven to 200oC/gas mark 6
Place the wellington onto a tray and brush with egg wash
For a medium-rare Wellington cook until the pastry is golden brown and for;
10 minutes for 125g
15 minutes for 250g
20 minutes for 375g
25 minutes for 500g
30 minutes for 750g
Add 5 minutes for medium
Allow for 10 minutes resting before carving
