Students will prepare and take home something for everyone after working under the guidance of our butcher to sauté a whole chicken before applying a choice of marinades, bone out a lamb breast and produce lamb kofta kebabs, prepare a pair of rich, beefy flat iron steaks, produce baby back ribs and medallions from a pork loin and top it off with hand-made brisket burgers.

I wanted to drop you a line to say what an enjoyable time I had on the butchers course on Tuesday night - and to ask you to once again pass on my thanks to your Head Butcher for making it a great educational, relaxing and entertaining experience. I slow roasted the lamb noisette for the family last night and felt like a decent cook for once.
