Castelvetrano Olives come from the Belice Valley in Sicily, famous for this particular type of olives. The green olives are harvested young and unlike other olives, they are not cured but washed in lye and water for a few week - in Italy we say "in Salamoia" - so that the bitter taste goes away. They are crunchy, firm and meatier than other variety. Medium in size and oval in shape, the Castelvetrano provides a mild and slightly salty flavor.
