Working with a half lamb carcass each, students will have the chance to break this down and produce a wide selection of cuts from (not all) butterflied half leg and a tied bone-in half leg, a mini chump roasting joint, breast ribs, loin and French-trimmed best end, neck fillet and a full shoulder for roasting. All trim from the carcass will be minced and used to produce lamb kofta kebabs. 5kg of the meat worked on for the evening will be yours to take home.
